Chocolate Cake
Carol Spencer gave us this recipe for an easy chocolate cake, made by the melting method.
INGREDIENTS
115g (4oz) butter
115g (4oz) caster sugar
1 large egg, beaten
170g (6oz) self raising flour
2 tablespoons of cocoa
180ml (6fl oz) milk
1 tevel teaspoon bicarbonate of soda
METHOD
Melt the butter and sugar gently in a saucepan, until combined but not sizzling. Cool for 2 minutes
Add egg and beat well to combine.
Fold in cocoa and flour.
Mix milk and bicarbonate of soda together and add slowly to the ingredients in the pan, mix well.
Divide the batter between two 18cm (7") cake tins and bake in a preheated oven at 180C/350F/Gas 4 for 25 minutes.
When cool fill with butter icing, and top with chocolate ganache and white chocolate buttons.
