Native American Indian Flapjack
This recipe is from our President, Debbi Perkins. She writes:
This is a recipe that I found when I was writing lesson plans for teaching the History of the Native American Indian to my classes. The Native American Indians say that if you eat this you will live to be 100 years old. It is easy, quick, delicious and healthy - I tested it on the committee who all agreed!
Ingredients
1 cup olive oil
1 cup honey
2 cups oats (you may need more)
Grated rind of 1 orange
Grated rind of 1 lemon
Method
Preheat the oven to 200 degrees.
Gently heat the oil and honey in a pan until they are melted together.
Add rinds and mix well.
Stir in oats and mix until well coated.
Turn into a baking tin and pack down well. It should be 3 - 4 centimetres deep.
Bake for 20 minutes until golden.
Allow to cool for a few minutes, then cut into squares.
Leave in the tin to cool completely. Try not to taste it before it is cold - I couldn't wait and burnt my tongue!
