Cheese Recipes
Following the entertaining evening when Webb Freckingham from The Cheese Shop on Flying Horse Walk, Nottingham came to talk to us about cheeses and them demonstrate various cheese dishes, we have been fortunate that he has sent us these cheese recipes to try.

1. Tunworth Cheese
Take the cheese out of the box and put 2 layers of foil around the cheese, leaving the top open. Put the cheese back into the box.
Cut a criss cross pattern into the top of the cheese with a sharp knife.
Either push small sprigs of rosemary or thyme into the cheese, or drizzle with honey.
Add thinly sliced garlic, a little olive oil and a splash of white wine.
Bake at 180C for 10 - 12 minutes.
Serve immediately with bread sticks or vegetables to dip in.
2. Stilton Cheese
Crumble cheese into a bowl (it crumbles better if left out of the fridge).
Add sliced, chopped garlic, then the juice of a lemon
Mix together with white wine, black pepper and double cream - do not add any salt.
Line a dish with little gem lettuce, and add cheese mixture to the centre.
Leave to set in fridge, or serve at room temperature.
Cut batons of carrot and celery for dipping.
Can also add smoked paprika or chopped parsley on top to garnish.
3. Cotehill Blue Cheese from Market Rasen
Place a layer of watercress on a serving dish.
Add a cored and thinly sliced pear, and a handful of coarsely chopped walnuts.
Add thinly sliced Cotehill Blue cheese on top.
For the dressing mix 3 parts extra virgin olive oil to 1 part port, with lemon juice, salt & pepper and drizzle over the dish.
4. Old Winchester Cheese
Blanch some asparagus, green beans and mangetout for 1 minute and then chop them.
Mix with some peas (fresh or defrosted frozen), and a thinly sliced red onion. Place on a serving dish.
For the dressing mix extra virgin olive oil, sherry vinegar, black pepper and pinch of salt and pour over salad. Toss lightly.
(This is good left overnight as it takes on more flavour.)
Add slivers of Old Winchester, a vegetarian Parmesan-style cheese.
You could also add chopped, grilled bacon. Mozzarella or Burretta cheese can be used instead.
5. Colwick Cheese
This is a cheats creme brulee.
Sprinkle brown sugar on top of the cheese.
Brown the sugar with a blowtorch (or flash under a preheated very hot grill).
Put in the fridge to harden the caramel.
Place the cheese in the centre of a plate and put a selection of fresh berries around the edge.
